Louisiana-fried chicken giant Popeyes is making waves in the fast-food industry by reportedly revamping its kitchen operations in a bid to address customer complaints about inconsistent service. Diners have voiced frustration over long wait times, missing menu items, and variations in food preparation across locations. The chain thinks the newer streamlined kitchen will offer a “better guest experience through higher accuracy and faster speed.”

Sami Saddiqui, CFO of parent company Restaurant Business International, said about the kitchen changes:

Categorically, people love Popeyes’ food. But they’ve told us the experience can be inconsistent As we did a bunch of research, our kitchen formats had not been updated in about a decade. In that decade, a lot has changed – the emergence of boneless chicken, digital becoming a more meaningful channel. Those shifts require a rethink.”

Popeyes has been rolling out its “easy-to-run kitchen conversions” slowly over the course of 2024. They say the operation will likely continue into 2025.

The initiative began as a test in California, featuring upgrades across the board. This included installing new equipment, revamping kitchen layouts, integrating advanced technology, and simplifying existing processes. Saddiqui, revealed the revamp involves a total of 30 distinct changes such as; automated chicken battering equipment, reducing manual labor and allowing staff to focus on other areas.

Kobza, continued: “We’re going to do a larger deployment in the cluster in California and then we’ll do a few more throughout the course of 2024 so we can really figure out how to refine the deployment model and do it effectively market by market.

These changes come after a period of surging popularity for Popeyes, fueled by viral menu items like their fried chicken sandwich. The increased demand might have strained existing kitchen operations, leading to service inconsistencies.
